Food is about family, sharing and getting together

So, has anyone else got a bit too caught up in this food intolerance journey? Been super vigilant and strict with food, to the point of compulsion? I understand, there is so much to digest (pun intended) and so many foods that could be a culprit! But seriously, maybe it’s time not to take it too seriously. We all know shit can happen in life, kids can get sick and they can misbehave – for many reasons. So, it’s probably not the end of the world if we’re a little flexible and let them try something yummy as an experiment – and if it backfires miserably, and they have a really bad reaction, we just don’t do it again!

Have you ever felt powerless to change a situation? Overwhelmed? In over your head? Too much else to worry about without cracking open a brand new problem? Hell, yes!

What if it was about your kids, though? Would that make you act? Because we all want what’s best for our little people, don’t we. They’re our world. So if they’re sick or unhappy, we’d do anything to help them, right?

Some kids struggle more than others… they find it harder to sit still, concentrate, stay calm and in control of their emotions. That’s just how they are, right? Well, sort of. Sensitive personalities are the most likely to be sensitive to foods. These ‘personality traits’ come and go, meaning something has to be triggering their hyperactivity and their hostility.

Gluten-free dairy-free banana & carrot pancakes

Yummy and healthy weekend breakfast idea

Looking for an intolerance-friendly brekky idea? Something that’s gluten-free but also made from whole grains, to keep you and the kids fuller for longer? Then this is the one for you! Hidden vegetables? Tick. Fruit as a natural, high fibre sweetener? Tick. No dairy but still light and fluffy? Tick, tick and tick.

This one is easily adjusted for a salicylates intolerance – just leave out the spices. If amines are a problem, make sure your banana isn’t too ripe and don’t use any coconut. Easy and done.

Takes about 10 minutes to whip up, plus frying time, so it can even be done on a Sunday morning while the hungry troops are waiting. Double the mixture and freeze uncooked leftovers for next weekend! Serves four, but if you’ve got a really hungry husband like me, might be good to cook up some extra!

They-won’t-even-know-it’s-not-chocolate carob cake!

Gluten-free, dairy-free, low amines & salicylates (with modifications)

I have made this cake so many times and it is always delicious. I’ve taken it to grown up parties, and served it with berries and yoghurt or ice cream, or slathered it with healthy frosting – avocado, carob powder and maple syrup to taste. It’s always well received because it’s moist and light, so doesn’t seem gluten-free and is 100% ok for my little dairy-free and amine-sensitive kids! It is adapted from a Nigella Lawson recipe, so you know it’s going to be easy and yummy.
