Simple buckwheat pancakes

Do you love a simple recipe? Is 4 or 5 ingredients and a quick stir together your ideal way of cooking? Then these beautifully simple buckwheat pancakes will be just right. They are equally delicious for the non-sensitive members of the family. And are light but also filling, to keep everyone satisfied. Serve with bacon for the absolute win!

I have other recipes for gluten free pancakes and they are full of nutritious ingredients such as banana, carrot, brown rice flour and eggs. However, sometimes I want something super easy and quick, and so here we are!

Pancakes don’t have to take long to make just because they cater to all your food intolerances. This recipe is so quick and simple, the family can whip it up for you! Exactly what we did for Mother’s Day – kids made the batter, Dad cooked them on the BBQ with some crispy bacon. (Kids poured us beer and vodka to go with lunch! I got my new Mum life glass!)

Ingredients
Gluten free, dairy free, egg free, soy free, citrus free

2 cups buckwheat flour (or for a fluffier result, substitute 1/4 cup tapioca flour)

2 cups plant milk of choice (almond or coconut are my faves)

2 tsp baking powder

1/2 tsp vanilla extract or vanilla bean paste

1/4 tsp sea salt

Method

Sift flours and baking powder together. Wisk in salt, milk and vanilla.

Warm up your pan or BBQ to medium heat. Make sure the pan is either sealed/seasoned or non-stick. I don’t like non-stick pans because they contain nasty chemicals which can leach off into our food over time (especially when they get scratched!). So I use stainless steel pans and I seal them before cooking to make them non-stick. Here’s a how-to on sealing stainless steel pans. Or for seasoning cast-iron pans, you could try this technique.

Once your pan is sealed and warmed up, add a little oil. Use a large metal spoon to scoop mixture into pan. Roll pan around to spread out pancake mixture. Wait. And watch.

Once bubbles start to appear your pancakes are ready to flip. Ease a spatular under the edges and flip over. Keep your pancakes warm in a low oven while you keep cooking. Serve and enjoy with loved ones.

Serving suggestions:
– brown sugar and apple cider vinegar or lemon juice
– sheep’s yoghurt and slices of banana, pear or berries
– maple syrup and bacon!
