BBQ plum sauce

I needed a pizza sauce that had no tomatoes and no citric acid. Plums are naturally low in citric acid, unlike most other fruits! And BBQ sauce is pretty awesome, so this tasty (little bit sweet, little bit sour) sauce was born.

Gluten free dairy free Low citric acid Low amines / glutamates

Ingredients

1 x 500g jar plums (rinsed well – careful what’s in the syrup / juice, avoid 330 and fruit juice will increase the citric acid content, but I’m not sure by how much)

OR 10 fresh plums, seeds removed

1 tsp cinnamon

1 tsp cumin

1/4 tsp cloves

1/4 tsp nutmeg

2 tsp Dijon mustard (or other mild mustard)

1 tsp fish sauce

2 tbsp + 1 tsp apple cider vinegar

3 tsp molasses

1 tsp maple syrup

1/2 tsp sea salt

1/2 cup water

Method

Bring all ingredients to the boil and simmer, uncovered, for around 30 minutes, or until reduced by about half. Blitz all ingredients – I used a hand blender, but if you could use a food processor or Nutribullet or similar (just allow to cool a little first).

Serve with paleo chipolatas or other preservative free sausages (try Dural Poultry and Meats or Tender Value Butcher in Hornsby), as a pizza sauce on homemade chicken, bacon and rocket pizza, or alongside some grilled chicken and vegetables.
